Most nights I get home fairly late – between 7 and 9. That wouldn’t be so bad except I am up by 6 each morning and LOVE my sleep. So if I am getting home so late, I need to have meals that are quick and easy.
I tried a new beef stroganoff recipe last week and am really excited about it. The bonus, it only took me about 15 to 20 minutes to cook. And since I was taking pictures, you could probably make it quicker.
First, throw your ground been into a skillet to cook. I think I had about 1 ½ lbs.
And I added some of my go to seasonings when cooking quick for myself and Baker Man – Salt, Pepper, and Red Pepper Flakes.
Meanwhile, throw some egg noodles on to cook and chop some veggies. I decided to use onion and green bell pepper, some more “go to” items for me when cooking quick. I chopped one green bell and about ¼ of an onion roughly.
Of course I stirred the ground beef periodically and it should be about done now. Add the veggies to the ground beef and let it cook for a couple minutes. Add a can of condensed golden mushroom soup and half a can of water. Give it a good stir.
To make it a little creamy, add some cream cheese. I used 4 oz or half a brick. Stir it in until it is fully melted.
The recipe that inspired me to use cream cheese used a full brick for about the same proportions. Baker man and I are trying to cut back on dairy so I used half. It was plenty creamy.
Serve over egg noodles….yum.
Quick and Easy Beef Stroganoff
Approx 1.5 lbs of ground beef
Seasonings to taste (salt, pepper, red pepper flakes)
1 green bell pepper
1/4 large onion
1 can condenced cream of golden mushroom soup
4 oz cream cheese
Cook ground beef on skillet seasoning to taste. Once cooked, add onion and green bell pepper. Stir in mushroom soup and and about half a can of water. Stir in cream cheese until fully melted.
Serve over egg noodles.
