The first time I made this, or something like it, I was struggling for a dinner.  I had nothing planned and little time.  So yes, it was pretty much like every night for me.  So I just threw a bunch of ingredients into a casserole dish and threw it into the oven. 

And Baker Man came into the kitchen and asks me what I am making.  And I respond…”Chicken…and stuff”. And then a little later we sit down to eat and after his first few bites he says “So what is this?  Beef stew but with chicken?”  And I look at him and ask “do you like it?” to which he responds “yea”.  So I say “sure, it’s beef stew but with chicken”. 

And so I call this Fake Chicken Stew – because that is what Baker Man thought he was eating. 

Anyhow, to make it, you cut up some potatoes, and chicken, and veggies.  I used onion and green pepper which are staples in our house.  Carrots and celery are good too.  That kind of stuff goes in stew right? 


Dump all of that into a casserole dish.  And you pour half a bottle of zesty Italian dressing over it.  And that is how I made it the first time.  The second time, I added a can of diced tomatoes and pre-cooked the chicken on the stove-top.    


And you cook it for 20 minutes at 400 degrees (or until the chicken is cooked through).  I pulled the dish out occasionally to stir everything up and make sure the Italian dressing was coating all of the other ingredients. 


And there you have it, a one dish meal.  That tastes like yummy stew according to Baker Man. 

Fake Chicken Stew

2 Chicken breasts, cut into cubes
2 to 3 potatoes sliced thin
Veggies of choice, chopped
   Bell Pepper
Can of Diced Tomatoes (optional)
1/2 Bottle of Zesty Italian Dressing

Combine all ingredients in a casserole dish.  Cook at 400 degrees for 20 – 30 minutes or until chicken is cooked through. 

Chicken can be pre-cooked stove top to reduce oven time.  If you do this, do not cook chicken fully.  Start the cooking then put them in with the rest of the ingredients and cook in over for 10 – 15 minutes.  This time should complete the chicken and allow the potatoes to cook.
