Also, Jackie … my aunt takes the parchment paper and rolls a good two inches down the edge of her table/counter/whatever surface she’s using … and just rests her hip against it.
Excellent suggestion, Holly! That will definitely work too. The Silpats aren’t necessary, but can make life easier if you have them. I also bake cookies on the Silpat rather than directly on the cookie sheet… it allows the cookies to bake more evenly (and therefore less crisp bottoms). Parchment could easily work in its place!
Any suggestions for someone who doesn’t have a Silpat?
